Apple Crisp
4 large or 5 medium Granny Smith apples (do not peel)
1/2 cup butter
1/2 cup sorghum flour
1/4 cup cornstarch
1/4 teaspoon xanthan gum
1 teaspoon cinnamon
1/2 teaspoon baking powder
1 cup brown sugar
pinch salt
1/2 cup cold water
Slice apples thinly. Mix ingredients except water to crumbly mixture using a pastry blender. Layer apples in 8 x 8-inch square pan, and sprinkle crumbly mixture on top. Drop water by spoonfuls evenly over top of all ingredients (do not ignore this step). Bake 30 to 40 minutes at 375 degrees, or until apples are tender when you test with a fork. Serve warm; great with ice cream. Refrigerate if you will not eat this within a few hours.
(Note: This recipe is best on the day it is made. It “falls” a bit with age.)
