Sweet and Savory Avocado Walnut Salad
Lettuce, spinach, or a mixture
1 carrot, grated
2 green onions, chopped
Handful of walnuts
Handful of dried cranberries
1 avocado, diced (the easiest way to do this is to cut in half; remove pit; then slice lengthwise and crosswise while still in the peel; pop from peel onto plate)
Briannas® Dijon honey mustard dressing (all natural, gluten-free, nut-free, trans fat-free, HFCS-free, vegetarian, lactose-free, egg-free)
Prepare lettuce, spinach, or a mixture. Add remaining ingredients. Toss gently. Yield: one serving.

The dried cranberries provide just enough of a hint of sweet chewiness, while the onions deliver a savory bite, and the walnuts supply a satisfying crunch. It might be psychological, but I feel better after I eat this salad.
